Ingredients for mini empanadas

  • 1 tomato (110 g)
  • 1 tablespoon of salt (25 g)
  • 1/2 red bell pepper (60 g)
  • 3 cups of water (400 ml)
  • 2 medium onions (150 g)
  • 6 cups minced meat (600 g)
  • 5 cups cornmeal (500 g)
  • 3 tablespoons of vegetable oil (90 ml)
  • 1 tablespoon unsalted margarine (25 g)
  • 2 tablespoons of cumin (50 g)

Preparation of the mini empanadas

  • First wash the vegetables. Drain well and set aside.
  • Then finely chop the onions, tomatoes and red peppers.
  • Next, fry the vegetables with the margarine.
  • Then immediately add the minced meat along with the salt and cumin. Mix well and cook over medium heat for 5 minutes.
  • Now it’s time to make the batter. In a medium bowl, add the water and cornmeal with a pinch of salt.
  • Add the remaining ingredients and form a smooth dough.
  • Take a small ball of dough and roll it out with the rolling pin.  Then add the filling.
  • Fold the round dough in half and seal the outside with your fingers.
  • As soon as all the mini empanadas are ready, you can fry them in the pan in oil on both sides. If you wish, you can also bake the empanadas in the oven.
  • Serve the mini empanadas with different sauces. Good Appetite!
