Squid baked or fried in batter is delicious. Braised squid, on the other hand, is an aromatic and juicy dish. The flavors of the Sofrito (a seasoning sauce) as well as the fresh and dried spices make these recipes a real feast for the palate.

If you can clean seafood, buy it in one piece. If not, just ask your fishmonger if they can cut the squid for you. Preserving the taste and texture of the squid is very important.

One of the best things about squid is that there is little to waste on this food. Most stew recipes use ink, legs, and tentacles. As you can see, squid is a fascinating cooking ingredient.

Here are some general tips for cooking with squid:

  • First and foremost, you shouldn’t cook it too long or it will become hard or rubbery.
  • If you want to blanch it, soak it in milk for two hours before cooking.
  • The most important thing is that you don’t use squid that has been in the freezer for more than 3 months.
  • When cooking squid, there are two ways to do it. You can z. B. fry quickly on the grill. However, if you cook it briefly on the stove, you should simmer it first for a softer end result.

Braised squid with a side dish of potatoes

Braised squid goes well with a serving of potatoes as a side dish

ingredients

  • Potatoes (1 kg)
  • Squid (1 kg)
  • Garlic (3 cloves)
  • Salt, pepper (to taste)
  • Onion (50 g)
  • Red peppers (50 g)
  • Peeled tomato (50 g)
  • White wine (200 ml)
  • Green pepper (50 g)
  • Oregano (1 teaspoon)
  • Olive oil (3 tablespoons)
  • Allspice or paprika powder (1 teaspoon)

Braised squid with potatoes: preparation

  1. First wash, clean and cut the squid.
  2. Then cook the garlic and onion in a pan in oil. Place, making sure that you roll the garlic and cut the onion into thin slices.
  3. When the garlic begins to brown, add the pepper cut into small pieces. Cook until the peppers have reached a soft consistency.
  4. Then dice the tomato and add it to the pan. When the tomatoes start to boil down, add the squid, making sure they’re covered in the sofrito, also known as the seasoning sauce.
  5. Next, season the sauce with the green pepper, oregano, and salt and pepper. Add the bay leaf to the mixture as well.
  6. Then add the wine and water (enough to completely cover the squid). The squid should be easy to bite when done.
  7. If you sprinkle a few coriander leaves over the finished dish, you will refine the braised squid even more. The braised squid can be combined well with a side dish of potato cubes, French fries or steamed potatoes.

Juicy stuffed squid

ingredients

  • 1 cup of white wine (200 ml)
  • 10 small squids (500 g)
  • 1 can of peas (200 g)
  • 2 ripe tomatoes (80 g)
  • 10 prawns (300 g)
  • Green peppers (60 g)
  • Red pepper (60 g)
  • 1 cup of rice (200 g)
  • 1 large onion (80 g)
  • olive oil
  • 4 eggs (100 g)
  • Salt (to taste)
  • Skewers

Juicy, stuffed squid: how to prepare

  1. First, carefully clean the squid. Then remove the skin and cut the tentacles into small pieces. Repeat this process for the prawns, setting both ingredients aside.
  2. Cut the vegetables into small cubes and then poach them in a small saucepan with olive oil. Make sure to add the vegetables to the saucepan one after the other: first the onion, then the bell pepper and lastly the tomato.
  3. Now add a pinch of salt and sugar to remove the acid. Cook over low heat for about 30 minutes.
  4. After 30 minutes, put the tentacles in the pot and cook for another 10 minutes. Then add the prawns and cook for another five minutes. When the cooking time is up, remove from heat and let cool down.
  5. Then take the squid and fill it with the Sofrito mixture (leave a portion aside for later). After you’ve filled the squid, skewer it, then fry it in an oiled pan until golden brown.
  6. When the squid skewers are golden brown, place them in a saucepan and cover them with wine and water. Cook for 25 minutes, until the squid is tender.
  7. Add the rest of the Sofrito, the peas and the rice. Season with salt and wait until the rice is cooked through.
  8. Then remove from the heat and serve as desired. Braised squid is a meal in itself, but you can combine it with salads or french fries.
